Directions:
1) Heat oven to 350ºF
2) In medium saucepan, sauté onion in butter until golden brown
3) Stir in tomatoes and chilies, whole cut up tomatoes, sugar, salt and thyme
4) Bring to a boil; boil at medium-high heat 10 to 15 minutes, stirring occasionally, until thickened and liquid is greatly reduced
5) Spoon tomato mixture into 9-inch glass pie plate or other 1-quart oven proof serving dish
6) Cut goat cheese into ¼-inch slices
7) Arrange on top of tomato mixture
8) Sprinkle with pepper
9) Bake 12 to 18 minutes until cheese is heated through
10) Sprinkle with cilantro, if desired
11) Serve with toasted French bread slices, crackers or tortilla chips, if desired
12) Makes 6 to 7 appetizer servings
13) *Two (4-ounce) packages garlic and herb flavored soft spreadable cheese can be substituted for the goat cheese
14) Drop by large tablespoonfuls on top of tomato mixture, forming about 8 dollops
15) Sprinkle with pepper
16) Bake 8 to 12 minutes
